What makes our coffee so special?

Apart from freshness it’s the quality of the raw beans that we use and the care we take in roasting them to
exactly that point where we believe that a coffee reveals its best qualities.

We work directly with our preferred importers to always source the best ‘Specialty Grade’ lots after tasting
many samples. We are even working directly with our Honduran grower, Gerardo, to produce specific
varieties and special screenings for us.

Unlike most other roasters we follow the artisan tradition of slow roasting. Each batch of coffee takes us
about 18 minutes to roast, which is slow. This slow method allows us to fully develop the flavour and body
of our coffee without getting the charry flavours that would mask the true beauty in our beans. We roast
beautiful coffees and we want them to sing.
